Professor Jelić published her work in a prestigious magazine “Food Chemistry”

A full professor at the Faculty of Natural Sciences and Mathematics of the University of Banja Luka, Dijana Jelić, PhD, published in May 2025 a scientific paper titled “Advancing food fortification with kinetics: Stabilizing vitamin D3 through calcium carbonate – based vehicles” in one of the most prestigious world scientific magazines “Food Chemistry” with an impact factor 8,5.

Dr Jelić's paper deals with researching the stability of vitamin D and is a continuation of her scientific research commenced during her postdoctoral advanced training in Japan. The research was conducted in cooperation with scientists from the region, and most experiments were conducted within the Study program Chemistry at the Faculty of Natural Sciences and Mathematics in Banja Luka.

An advanced kinetic software was applied during the work, which enabled faster, more precise, and efficient determination of the stability parameters and the life span of the vitamin D when used as an additive in food enrichment.  Such an approach represents a significant contribution to the development of more reliable methods in the analysis of the nutrients’ stability and their application in industrial practice.

Published results represent an important step towards formulating more stable and longer-lasting products enriched with vitamin D, with the aim of fighting the nutritional deficit and improving public health.
